Keto Butter Chicken

Ingredients:
- 1.5 lbs (700g) boneless chicken thighs or breasts, cut into bite-sized pieces
- 3 tablespoons butter
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 cup heavy cream
- 1 cup crushed tomatoes (canned or fresh)
- 2 tablespoons tomato paste
- 1 teaspoon garam masala
- 1 teaspoon turmeric powder
- 1 teaspoon chili powder (adjust to taste)
- 1 teaspoon cumin powder
- Salt to taste
- Fresh cilantro, for garnish
Instructions:
- • Marinate the Chicken: In a bowl, combine the chicken pieces with garam masala, turmeric, chili powder, cumin, and salt. Let it marinate for at least 30 minutes (or longer for better flavor).
- Cook the Chicken: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the marinated chicken and cook until browned and cooked through. Remove the chicken from the skillet and set aside.
- Prepare the Sauce: In the same skillet, add the remaining tablespoon of butter. Sauté the chopped onions until translucent. Add garlic and ginger, cooking for another minute until fragrant.
- Add Tomatoes: Stir in the crushed tomatoes and tomato paste. Cook for about 5-7 minutes, allowing the mixture to thicken.
- Add Cream: Reduce the heat to low and slowly pour in the heavy cream, stirring to combine. Bring to a gentle simmer.
- Combine Chicken and Sauce: Add the cooked chicken back to the skillet, stirring to coat it in the sauce. Let it simmer for an additional 5-10 minutes to allow the flavors to meld.
- Garnish and Serve: Adjust seasoning with salt, if needed. Garnish with fresh cilantro and serve hot.
