Chadian Grilled Meat Skewers (Masa)

Ingredients:

  • • 1 kg beef or lamb, cut into bite-sized pieces
  • 3 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1-2 fresh chili peppers, chopped (to taste)
  • Salt and pepper to taste
  • Fresh herbs (like parsley or cilantro) for garnish
  • Wooden or metal skewers

Instructions:

  • • Marinate the Meat:
    • In a bowl, combine the meat pieces with vegetable oil, minced garlic, ginger, cumin, paprika, chopped chili, salt, and pepper. Mix well to coat the meat. Cover and let it marinate in the refrigerator for at least 1 hour (or overnight for more flavor).
  • Prepare Skewers:
    • If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
  • Assemble Skewers:
    • Thread the marinated meat onto the skewers, leaving a little space between each piece for even cooking.
  • Grill the Skewers:
    • Preheat the grill or a grill pan over medium-high heat. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the meat is browned and cooked through.
