Keto Cauliflower Fried Rice

Ingredients:
• 1 medium head of cauliflower (riced)
• 2 tablespoons sesame oil
• 2 cloves garlic, minced
• 1 small onion, diced
• 1 cup mixed vegetables (like bell peppers, broccoli, and carrots, cut small)
• 2 large eggs, beaten
• 3 tablespoons soy sauce or tamari (for a gluten-free option)
• 2 green onions, chopped
• Salt and pepper to taste
• Optional: cooked chicken, shrimp, or tofu for protein
Instructions:
• Rice the Cauliflower: Cut the cauliflower into florets and pulse in a food processor until it resembles rice. You can also use pre-riced cauliflower.
• Sauté Vegetables: Heat sesame oil in a large skillet over medium heat. Add the garlic and onion, sautéing until fragrant.
• Add Mixed Vegetables: Add the mixed vegetables to the skillet and cook for about 3-4 minutes until they are tender.
• Add Eggs: Push the veggies to the side of the skillet and pour the beaten eggs into the center. Scramble until fully cooked, then mix with the vegetables.
• Combine Ingredients: Add the rice cauliflower to the skillet. Pour in the soy sauce and stir everything together. Cook for another 5-7 minutes, stirring occasionally until the cauliflower is tender.
• Season: Add salt and pepper to taste. If using protein, stir it in now.
• Garnish and Serve: Remove from heat, sprinkle with chopped green onions, and serve hot.
